Ingredients
- 4 large boneless, skinless organic chicken breasts (cut into 1-1/2 inch cubes)
- 3 cloves of garlic (minced)
- ¼ cup olive oil
- ¼ cup dry white wine
- 1 lemon (juiced + zest)
- 2 tsp. fresh oregano leaves chopped
- 1 tsp. fresh basil chopped
- Sea salt and fresh ground pepper to taste
Instructions
- Soak bamboo skewers for at least half an hour.
- In a zip-loc bag, combine (garlic, olive oil, wine, lemon juice, lemon zest, oregano, basil, salt, pepper and shake to mix ingredients. Add the chicken.
- Seal the bag, and shake again to coat the chicken with the oil mix.
- Place bag in the fridge and allow chicken to marinade (At least 2 hours, or overnight if possible)
- Thread each skewer with pieces of chicken living one inch of the skewer exposed at the top.
- Season with additional salt & pepper if necessary, and grill until chicken is well cooked.
