Ingredients
- 1 head of cauliflower core removed
- 2 tbsp coconut oil
- 1 small onion (chopped)
- 1 cup chopped broccoli florets
- 4 garlic cloves minced
- 1 cup chicken broth
- ¼ dried oregano
- ½ tsp of curry powder
Instructions
- In a food processor with a grating blade, grate cauliflower, or use a cheese grater if you don’t have one.
- Chop broccoli
- In a large sauté pan heat the coconut oil.
- Add the chopped onion, garlic and broccoli florets and sauté for about 4-5 minutes or until soft.
- Add the cauliflower and keep stirring to coat with the oil well.
- Add the chicken broth, oregano, curry and sauté for another 10-15 minutes or until all the liquid is absorbed.
- Remove from stove and serve as a side dish.
