Cauliflower mashed potato

Ingredients
- 1 large head of cauliflower
- 5 large cloves of garlic
- 2 Tbsp. of olive oil
- ¼ of cup almond milk (optional)
- ¼ of tsp. of nutmeg
- ¼ of Sharp shredded cheddar cheese for garnish
Instructions
- Clean and cut the cauliflower into florets.
- Steam or boil the florets with the garlic until tender.
- Transfer to a food processor and puree until smooth.
- Add olive oil, and slowly add almond milk to reach the desired consistency, of your individual taste.
- Add salt and pepper to taste.
- Before serving, top with nutmeg & cheddar to garnish
