Bean vegetable soup

This bean  vegetable soup  is hearty and healthy and  will warm you all up inside.

Recipe type: Vegetarian
Ingredients
  • 11/2 cups of fresh lima beans
  • 3 tbsp. olive oil
  • 1 cup chopped white onion
  • 1 tsp. dried oregano
  • 2 cloves of garlic
  • 4 cups of zucchini, chopped
  • 1 cup carrots, chopped
  • 1 cup of fresh diced- tomatoes
  • 32 oz. low sodium vegetable broth (in a carton)
  • 4 cups of baby spinach leaves, washed and dried
Instructions
  1. Rinse beans and soak them overnight.
  2. Heat oil in a pot and over medium heat sauté onion until softened.
  3. Add oregano and garlic and sauté for about a minute.
  4. Add in the zucchini and carrots and continue to sauté until vegetables are tender.
  5. Add tomatoes, broth and lima beans and bring to a boil.
  6. Reduce heat and simmer until beans are soft.
  7. Add the spinach and cook until wilted.
