Ingredients
- 11/2 cups of fresh lima beans
- 3 tbsp. olive oil
- 1 cup chopped white onion
- 1 tsp. dried oregano
- 2 cloves of garlic
- 4 cups of zucchini, chopped
- 1 cup carrots, chopped
- 1 cup of fresh diced- tomatoes
- 32 oz. low sodium vegetable broth (in a carton)
- 4 cups of baby spinach leaves, washed and dried
Instructions
- Rinse beans and soak them overnight.
- Heat oil in a pot and over medium heat sauté onion until softened.
- Add oregano and garlic and sauté for about a minute.
- Add in the zucchini and carrots and continue to sauté until vegetables are tender.
- Add tomatoes, broth and lima beans and bring to a boil.
- Reduce heat and simmer until beans are soft.
- Add the spinach and cook until wilted.
