Baked Zucchini
Zucchini, also known as courgette, is one of our favorite vegetables due to its low score on the glycemic index and high anti-inflammatory properties. Mostly found in abundance during the summer months, zucchini is low in carbs & sugars and full of nutrients like manganese, potassium, Vitamin C, and Vitamin A. It is also a good source of B vitamins and fiber. Adding zucchini to the family menu is always a great idea. Here is a recipe that we love.

Ingredients
- • 4-6 zucchini
- • 3-4 cloves of garlic minced
- • Salt
- • Pepper
- • Greek oregano
- • Olive oil
- • Balsamic vinegar
- • A dash of cayenne (optional)
- • A little water
Instructions
- Wash & cut zucchini into ¼ inch circles. Place in a baking dish.
- Season zucchini with salt, pepper, garlic, oregano and drizzle all over with olive oil and balsamic vinegar. Add a dash of cayenne and set aside for an hour to marinade. Add a little bit of water to the pan before baking.
- Bake at 350 F until the zucchini is golden brown in color.
