Bahamian Macaroni & Cheese

Bahamian macaroni & cheese was the highlight of our Thanksgiving feast in the Florida Keys, we made a big pan of baked Bahamian Macaroni & Cheese, and enjoyed it as a side dish, along with a Turducken, & grilled sweet potatoes.

Bahamian Macaroni & Cheese

Ingredients
  • 2 cans fat free evaporated milk
  • 6 eggs beaten
  • 8 cups shredded sharp cheddar cheese
  • 2 tbsp of butter
  • ½ cup of Worcestershire sauce
  • 1 green pepper, chopped
  • 1 red pepper chopped
  • 1 onion chopped
  • 2 tbs of butter
  • 2 12oz boxes of gluten free macaroni
  • hot sauce & salt & pepper to taste
Instructions
  1. In a large bowl, mix the milk, the eggs, ¾ of the cheddar cheese, the butter, the Worcestershire sauce, and set aside.
  2. Chop up onion & peppers and boil them with the macaroni. Strain
  3. Add the macaroni to the cheese/egg mix, add hot sauce, salt & pepper to taste & mix well.
  4. Pour into a greased baking dish
  5. Sprinkle the rest of the cheddar cheese on the top.
  6. Bake at 350 for about an hour.
