Apple tarts
We happen to love apple tarts, and Dom loves to make them. By using only one layer of apples and one layer of pie crust, we find them lighter than apple pie. Apple tarts can also be made with home made puff pastry, or more traditional pie crusts.

Ingredients
- Puff pastry (17.3 oz. 1.1lb) 2 sheets
- 3 granny smith apples peeled & thinly sliced
- 1 lemon
- 1 ½ Tbsp. sugar
- 1 tsp. cinnamon
- ¼ cup butter
- ¼ cup honey
Instructions
- Thaw out puff pastry. Pre-heat oven to 400F.
- Place the thinly sliced apples in a bowl, add the lemon juice, the sugar & cinnamon and mix till coated evenly.
- On a baking sheet, unfold one sheet of puff pastry, and divide it into 3-inch wide strips.
- Place apples on each pastry strip overlapping one with the other.
- With a fork, poke holes around the edges of the pastry, melt butter and brush it all over apples & pastry.
- Bake for 25 minutes or until the edges of the pastry turn brown.
- Warm honey for 30 seconds in the microwave, and pour over the apples. Allow a few minutes to absorb in the warm oven.
- Sprinkle with some powder sugar & cinnamon before serving.
- About 6-9 servings
