Spinach triangles (spanakopitakia) with feta

The abundance of fresh ingredients from our garden such as dill, green onions and parsley inspired us to make the spinach triangles today (spanakopitakia). They were eaten so fast, we have to make them again very soon.  Nothing can beat fresh from the garden. Here is the recipe.

Spinach triangles (spanakopitakia)
Ingredients
  • 3 lbs. fresh spinach or (5-10 ounce packages frozen) organic chopped spinach thawed
  • 2 onions chopped (about 2 cups)
  • 1 cup green onions finely chopped
  • 4 cloves of garlic
  • 1 cup fresh parsley finely chopped
  • 1 cup fresh dill finely chopped
  • ½ cup olive oil + extra to brush the filo
  • Filo dough 16oz (1lb) Approx. (19”x14”) Filo sheets
  • 1 tsp. salt, & some fresh ground pepper to taste.
  • With Feta (optional)
  • 2 cups (16 oz) fat free cottage cheese
  • 1 cup feta crumbles
  • 1 eggs
Instructions
  1. Preheat oven to 350 F degrees.
  2. Rinse and drain spinach well. Set aside
  3. Heat the oil in a large skillet; over medium heat
  4. sauté onions, green onions, and garlic until soft.
  5. Add parsley; spinach, dill, salt & pepper to taste, and simmer over low heat, stirring often until all liquid has evaporated.
  6. Skip this step #7 if you don’t want to add cheese
  7. In a bowl, combine cottage cheese, feta, and the egg. Add the cooked spinach mixture and mix well.
  8. Brush a baking sheet with oil.
  9. On a flat surface, unroll the filo dough. Take 3 sheets out and with a sharp knife, cut the filo into 4 strips. Cover the rest of the filo sheets with a damp towel to prevent them from drying and falling apart.
  10. With a pastry brush, brush each strip of filo with olive oil.
  11. Place a spoonful of spinach filling 1 inch from the end of the filo dough and fold the end over the filling to form a triangle. Continue folding from one end to the next in triangle form until you reach the end of the strip.
  12. Brush all triangles with oil and place on a greased baking sheet. Repeat steps with remaining strips.
  13. Bake for 30-40 minutes or until the triangles are golden brown and their aroma fills the kitchen. Serve hot.
Notes
You can prepare ahead of time and freeze them before baking.
Makes about 50 small triangles
