This is a great soup for the holidays. A family favorite.
Ingredients
- 1 large pumpkin skinned, deseeded and cubed.
- 2-3 tbs of olive oil
- 1 medium onion chopped
- 4-5 cloves of garlic minced
- 1 inch ginger minced
- 4 cups of chicken stock
- ½ tsp nutmeg
- ½ sage
- 1 tsp cinnamon
- Salt & pepper to taste
- A pinch of Cayenne (optional)
Instructions
- Heat olive oil (medium heat) in large stock pot
- Add garlic, onion, ginger, cook till soft.
- Add spices (sage,cinnamon,nutmeg) and stir in to release oils.
- Add pumpkin cubes and the chicken stock,(enough to cover the pumpkin)
- Bring to a boil add salt & pepper.
- Reduce and simmer till pumpkin is soft.
- when the pumpkin is ready, turn off the heat and use an immersion blender or a food processor to puree.
- Add a pinch of cayenne if desires (optional)
