Ingredients
- Lemon cookies:
- 3 cups all-purpose flour
- 3 Tsp. corn-starch
- ¾ tsp. salt
- 1 ½ cup butter or margarine, softened
- 1 cup confectioners’ sugar
- 1 Tbsp. freshly grated lemon peel
- 1 ½ tsp. lemon extract ¼ tsp. almond extract
- Lemon glaze:
- 1 ½ c. confectioners sugar
- 4 – 5 tsp. fresh lemon juice
- 1 ½ tsp. freshly grated lemon peel
- green food coloring
Instructions
- Lemon Cookies
- Preheat oven to 325 F.
- In medium bowl, whisk flour, corn-starch and salt together.
- Use a mixer on medium speed to beat butter and sugar until creamy.
- Add lemon peel, lemon extract & almond extract. Reduce speed to low; gradually beat in flour mixture until blended.
- Divide dough in half. Dust a little flour on a clean surface and roll out the dough to about ¼ inch. Use Christmas tree cookie cutters to cut the cookies.
- Place cookies, 1 in. apart, on two ungreased cookie sheets.
- Bake cookies until edges are golden, 15-16 min., rotating sheets between oven racks halfway through baking. Transfer cookies to wire racks and cool 10 min.
- In the meantime prepare the glaze.
- Lemon Glaze
- In small bowl, with wire whisk or fork, mix confectioners’ sugar, lemon juice and lemon peel until blended. Add green food color, and mix.
- Glaze each cookie.
- Place cookies on wire racks set over waxed paper to catch drips. Allow glaze to set, about 20 min.
- Repeat with remaining dough, adding a little water to glaze if it begins to thicken.
- Store in airtight containers between layers of waxed paper up to 5 days, or freeze up to 3 months.
Notes
How many cookies you end up with, depends on the size of the cookie cutter you use. We made about 30 cookies with a medium size Christmas tree cookie cutter.
