Ingredients
- 19 oz. can chickpeas rinsed
- 4 scallions
- 1 organic egg
- 1 Tbsp. fresh oregano (chopped)
- ½ tsp. ground cumin
- ¼ tsp. salt
- 2 Tbsp. olive oil
- 2 6-inch whole-wheat pitas
- For the sauce
- ½ cup plain non-fat Greek yogurt (organic)
- 2 Tbsp. tahini
- 1 Tbsp. lemon juice
- ⅓ cup parsley, (chopped)
- ¼ tsp. salt
Instructions
- In a food processor, place chickpeas, scallions, egg, flour, oregano, cumin, and salt.
- Pulse and pause a couple of times to scrape the sides until a coarse mixture forms that holds together to form patties.
- Form 4-5 patties, and In a large skillet heat the oil over medium-high heat.
- Cook the patties until golden and crisp on the outside. About 4-5 minutes.
- Flip them over and cook the other side until golden and crisp.
- To make the sauce, in a medium bowl combine the yogurt, tahini, lemon juice, parsley, salt, and mix well.
- Place patties on plates and serve with sauce and pita bread.
