Ingredients
- 1 cauliflower head cut in half
- 2 Tbs. extra virgin olive oil
- 1 small onion
- a pinch of sea salt
- a pinch of cumin (optional)
- ½ lemon juice
- Parsley to garnish (optional)
Instructions
- Use a box grater over a large bowl. Use the side of the grater with the bigger holes. Grate the cauliflower into “rice” by holding the stem. Use a cheesecloth and squeeze all water out.
- Heat the oil in a non-stick pan over medium high heat. When the oil is hot, add onions and cook until translucent and soft about 5-6 minutes. Add the cauliflower rice, salt to taste, stir to mix. Cook stirring often until the cauliflower rice is soft for about 5-8 minutes. Add cumin to taste.
- Place rice in a serving bowl, squeeze some lemon, and garnish with parsley.
